Simple salad recipes take almost no time to prepare and yet are so good you’ll want to make them often.
Salads are absolutely wonderful for this time of year (well, anytime of year really) because they’re usually served cold (or at least cool) and help keep you cooler when eating during the hot summer months. They’re also quite tasty!
Luckily salads aren’t just a bowl of lettuce with other yummy fillers (although I confess I love a good lettuce salad). Besides the usual lettuce type salads where you can add just about anything to make a different salad, you’ve also got potato salad (yum!), bean salad, etc.

Today, I’m giving you another kind of salad recipe that perhaps you’ve heard of but haven’t tried. It’s a recipe for Bacon and Broccoli Salad, and it’s not only super delicious, it’s also healthy and oh so good and cold to beat the heat of a hot summer day. This Bacon and Broccoli Salad Recipe has flavors that are sure to win over your family and friends. Its tasty combination of bacon, broccoli, olives, Greek yogurt, cheese, and other ingredients will surely have them asking for more. This salad can be served as a meal on its own, as an appetizer, or side side dish at your next get together.
Bacon and Broccoli Salad Recipe
Ingredients:
1 or 2 heads of broccoli (depending on how much you want)
½ cup red onion, chopped
¼ cup black pitted olives
8 slices bacon
1 cup cheddar cheese, shredded
Handful of sesame seeds
Dressing Recipe:
½ cup mayonnaise
½ cup Greek fat-free yogurt
¼ cup white wine vinegar
1/8 cup sugar
Cut the broccoli into small bit size pieces. Place the broccoli pieces in a large serving bowl, add the shredded cheese, onion, and dressing and chill covered for 2 to 3 hours.
Once it’s chilled, fry the bacon in a small skillet until it’s good and crispy. Once it’s done, remove the bacon from the skillet and place on paper towels to drain the bacon grease. Pat the bacon to help absorb the excess grease.
Allow it a few moments to cool down, then crumble the crispy bacon into bits and add to the broccoli. Add the sesame seeds and olives, then toss it all together nicely.
This Bacon and Broccoli Salad is best served cold. Leftovers should be covered and can be kept for a couple of days (like it will even last that long!).
This recipe is perfect for family gatherings because it can be made in advance and served later that day, or even the next day.
